Pesto Salmon & Italian Green Beans
Who likes a super fast weeknight meal? Everyone, right?! This is the ticket. From start to finish it takes less than 30 minutes. Nearly all of the ingredients can be found at Costco which makes for easy shopping and makes this meal even better!
Salmon is such a good fish to cook with. It has heart healthy fats and easily takes on the flavor of whatever you cook it with. Since pesto can sometimes be heavy I paired this dish with fresh green beans jazzed up Italian style, sun-dried tomatoes, pine nuts, and topped with parmesan cheese.

PESTO SALMON
Ingredients:
Pesto
Salmon (fresh or frozen- I prefer fresh)
Process:
Slather pesto on salmon and grill until fish is tender (don't overcook!)
ITALIAN GREEN BEANS
Ingredients:
Garlic infused olive oil
Green beans (fresh or frozen - prefer fresh)
Sun-dried tomatoes
Pine nuts
Grape Tomatoes
Parmesan Cheese
Process:
Saute green beens in 2 Tbls garlic olive oil for 3-5 minutes on medium heat. Add in sun-dried tomatoes and pine nuts. Cook another 2-3 minutes. Add fresh tomatoes and parmesan cheese and cook 1-2 minute. Serve hot!
