Mediterranean Veggie Salad
Remember that Mediterranean Chicken Salad with the marinade that doubles as dressing? This recipe uses that same dressing and is SO easy to make! It is a great dish for Low Macro day (all my FASTer Way to Fat Loss® peeps know what I am referring to here!) or really any day you are looking for something refreshing and tasty.

This recipe is full of Mediterranean flavors like artichokes, tomatoes, cucumbers, onion, lemon, goat cheese and chickpeas. If you are a fan of olives (which I am NOT) you could add them here too. As I am writing this, I think some pepperoncini would really escalade the tastiness of this dish! I am doing that next time! Be sure to top with mint or basil...you will thank me.

Ingredients for Salad:
Tomatoes
Artichokes
Red onion
Chickpeas - roasted or raw
Cucmbers
Olives
Pepperoncini
Goat Cheese
Mint or Basil
Process: Chop all veggies to desired size. Mix together with dressing and top with goat cheese & mint or basil.
Ingredients for Dressing:
juice of 1 lemon (1/4 cup fresh squeezed lemon juice)
2 tablespoons water
2 tablespoons red wine vinegar
2 tablespoons fresh chopped parsley
2 teaspoons dried basil
2 teaspoons garlic , minced
1 teaspoon dried oregano
sea sale and pepper to taste
Process: Mix all ingredients and pour on top of veggies.
