Crockpot Birria Tacos


I have never met a taco I didn't like. I cannot quite tell if my family is happy when we make tacos or if they are thinking, 'again'? We eat salmon tacos, chicken tacos, shrimp tacos, beef tacos, street tacos and mahi tacos. I would eat tacos (& pizza) 5 nights a week if I could!


Birria is a spicy stew marinated in adobo spices served with corn tortillas, onion and lime. This isn't exactly authentic since Birria is traditionally made with lamb and I used chuck roast but I hope it's a nice tribute to this dish!


This recipe seems like it has a lot of steps but once you make it for the first time the second time is much quicker and let me tell you, it is SO worth it. These are some of my all time favorite tacos! You can save some time by browning the meat while roasting the jalepenos, garlic, onion and tomatillos. Fill the crockpot with all other ingredients (minus vinegar) and get everything ready to be cooked.


Ingredients for Tacos:

  • Chuck roast (3-5lbs)

  • 8 tomatillos

  • 1 large jalepeno or two small

  • 1 medium sweet onion

  • 5 cloves garlic

  • 4 chilis in adobo

  • 1.5 cups pale ale

  • 1.5 cups chicken stock

  • 1/4 cup cider vinegar

  • 2 teaspoons dried oregano

  • 1 tablespoon fresh ginger grated

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon cumin

  • 1 tblsp avocado oil

  • salt and pepper to taste



Process:


Salt and pepper chuck roast on both sides. Brown chuck roast in avocado oil for 5 minutes on each side until meat is browned. While meat is browning, broil jalepenos, tomatillos, onion and garlic for 5-10 minutes or until all veggies are browned.


Add beer, chicken stock, dried oregano ground pepper, fresh ginger grated, cinnamon and cumin to crock pot and turn on. Once veggies are broiled add these, chilis in adobo to cider and puree. Add all items to crockpot with the meat. Cook for a total of 5 hours on high cook time or low for a total of 8 hours. When meat is done you will be able to shred easily with a fork.


Serve with Secret sauce, onion & cilantro, mango salsa and corn tortillas.


Ingredients for Secret Sauce:

  • 1/4 cup sour cream

  • juice from 1/2 lime

  • 1 tsp sugar

  • 1/2 tsp apple cider vinegar

Ingredients for Mango Salsa:

1 mango

  • juice from 1 lime

  • 1/8 cup cilantro

  • 1/8 cup red onion

  • 1 jalepeno

  • salt and pepper to taste


Ingredients for Onion Salsa:

  • juice from 1/2 lime

  • 1/4 cup white onion

  • 1/4 cup red onion

  • 1/2 cup cilantro

  • salt and pepper to taste
