Cookie Dough Pie

Those who know me know that I cannot say 'no' to chocolate chip cookies. They are my hands down favorite dessert of all time. Unadulterated deliciousness. They are buttery, salty, just enough chocolatey, doughy and so, so good. This is a chocolate chip cookie on steroids. It's a chocolate chip cookie PLUS the dough. A dessert could not get better in my eyes!

This pie is more of a chocolate chip cookie bar with cookie dough piled high on it. In between I put a light layer of my cheaters ganache (because it's only 2 ingredients and easy peasy) which adds to the texture. The top is eggless cookie dough! Best idea ever! My kids are over the moon about the eggless part...they think they can eat as much as they want without getting sick ;)

I have tried a dozen different chocolate chip cookie recipes but I use my all time favorite for the crust on this 'pie'. This recipe comes from my neighbor who happens to be one of my favorite people! I am going to blame it on her as to why I eat so many cookies when I make this recipe - I love her and thus love the dough. Yep, she's totally to blame ;)

Ingredients for Crust:

  • 1/3 cup shortening

  • 1/3 cup butter - room temperature

  • 1/2 cup sugar

  • 1/2 cup brown sugar (not packed)

  • 1 egg - room temperature

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • 1/2 tsp salt .

  • 1 & 1/2 cup flour (you can substitute gluten free flour here - I use the Namaste brand when I bake - in my opinion the GF it isn't as good but if you are GF it's still a win)

  • semi sweet chocolate chips


Preheat oven 350.

Cream shortening, butter, sugar and brown sugar. Beat in egg and vanilla. Slowly add in flour, soda and salt and mix. Stir in desired amount of chocolate chips.

Spray a pie pan and gently press the cookie dough to the bottom and the edges. Make sure the edges are thicker than the bottom of the pie. Bake for 15 minutes. This will make the cookie dough rise. Take out the pie and press down the bottom & sides of the cookie dough - it will be gooey. Bake for another 5 -8 minutes. Let cool before adding the filling.

Ingredients for Cheaters Genache

  • 1/4 cup cream

  • 1/2 cup semi sweet chocolate chips


Melt cream and chocolate together in microwave (30-45 seconds) or on stove (1-2 minutes stirring continuously) but be careful not to burn!

Once the crust is cool pour on top of the dough.

Ingredients for Eggless Cookie Dough Filling:

  • 3/4 cup butter

  • 3/4 cup brown sugar

  • 1/4 cup sugar

  • 2 tblspn whole milk

  • 2 tspn vanilla extract

  • 1/4 tsp salt

  • 2 cups flour (of GF flour)

  • semi sweet chocolate chips


Mix together the butter, brown sugar and sugar until creamy. Stir in the milk and vanilla. Fold in the flour and salt and mix on low until combined. Add chocolate chips to desired amount (or leave out all together). I make the pie half and half. Half of the dough with no chips and with chips.

Once the crust is cool start filling the pie! You can use all the batter to make it nice and thick or use some and save some for later!

Place pie in fridge for 30 minutes to chill. Eat and enjoy!!
