Classic Cobb Salad & Bacon Tomato Vinaigrette



It is pretty obvious how much I like salads! They are versatile and easy to put together which makes it a week night staple for my family. My kids are not quite salad eaters yet but they will always eat the protein and the veggies so there I do not end up making multiple meals!

For my FASTer Way to Fat Loss participants, this is a perfect Low Carb meal!!


This classic Cobb salad with the dressing is something you will want to make over and over! It's a mouthful of flavors, textures and just plain deliciousness.



PRO TIP:

This bacon sea salt really adds a lot to this salad. A little goes a long way and will be your new favorite salt!











Ingredients for Salad:

  • 6 oz chicken breast - grilled or use Rotisserie chicken

  • 2 hard boiled eggs

  • 4 slices bacon (I use turkey bacon)

  • 1 cup carrots chopped

  • 1 cup tomatos chopped

  • 1 avocado diced

  • 1/4 red onion sliced

  • 4 tblsp blue cheese

Process:


Grill chicken breast to desired doneness or use a rotisserie chicken. Chop all ingredients and place over a bed of spinach. Top with vinaigrette.




Ingredients for Dressing:

  • 3 plumb tomatoes

  • 5 strips bacon

  • 1 shallot

  • 2 garlic cloves

  • 2 tbslp balsamic vinegar

  • 4 tbslp red wine vinegar

  • 1/4 cup water

  • 1/3 cup avocado oil

  • salt & pepper to taste

  • 1/8 tspn smoked paprika (if you like a bit of spice)


Process:


Cook the bacon either on the stove or in the over until crispy. De-seed and roast the tomatoes at 400 degrees until the tomatoes are slightly charred. Place tomatoes, bacon, shallot, cloves and water in food processor. Once mixed add the vinegars, avocado oil and bacon. Shake vigorously. Season with salt, pepper and smoked paprika. Top on salad!
