Chicken & Veggies with Moroccan Dipping Sauce
I really like making meals that look fancy and sound fancy but when it boils down to it they are healthy and super easy to make! I especially like it when I can use Rotisserie chicken and half of the meal is done! This is one of those meals and it is CRAZY good. This is a spicy dish though (I warned you) so if you don't like spice just reduce the amount you put in.
The hardest part of this whole meal is putting everything for the Moroccan dipping sauce in the blender and then mixing up the yogurt mint sauce. Which means this meal is super simple and a crowd pleaser!


I roast whatever veggies I have on hand...tomato, carrots, green beans, brussle sprouts, broccoli, onion, peppers - anything works with this dish! (roast at 400 w/ olive oil and salt and pepper for 15-20min).
Pour the Moroccan sauce over the chicken and veggies. You can also use the sauce for dipping your Naan bread in! I even use this sauce to put over broccoli and leftover burger.
Moroccan Dipping Sauce Ingredients:
2 cloves of garlic (can use frozen garlic for ease)
1 inch fresh ginger peeled + chopped (can use frozen ginger for ease)
1/2 to 1tsp cayenne pepper
1/4 cup fresh cilantro
2 tablespoons fresh parsley
1 tablespoon smoked paprika
1/2 tablespoon cumin
1 teaspoon cinnamon
1/4 - 1/2 cup olive oil
Juice of 2 lemons
Process:
Place the olive oil, lemon juice, garlic, ginger, or cayenne, cilantro, parsley, smoked paprika, cumin, salt and pepper in food processor. Process 1-2 minutes or until everything is finely chopped.
If you are not a big spice fan you will want to 1/2 the paprika and cayenne pepper.
Pour this dipping sauce over chicken, veggies, naan bread or anything you find - it's THAT good!

Ingredients for Mint Yogurt Sauce with Goat Cheese:
1/2 cup plain nonfat greek yogurt
2 tablespoons (or more) of fresh mint chopped
1/2 teaspoon crushed red pepper flakes (omit if you don't like spice)
1 lemon - juiced
salt and pepper to taste
crumbled goat cheese to taste
