Caramel Chex Mix

This has been an ultra secret recipe of mine for years. Not because I don't want people to enjoy my Caramel Chex Mix. In all reality, l feel bad for all those who have not had my Chex Mix. Seriously! I have kept it ultra top secret because I LIKE making it for people. I have known that if I don't share the recipe, than I get to make people happy by showing up at their house with a bowl full of this stuff!! I really enjoy baking & cooking for people so this has been a 'secret weapon' of mine. :)


In the Christmas spirit, I have decided to share my top secret Caramel Chex Mix recipe with everyone. Well, anyone who reads my blog posts ;) When this arrives in your inbox you will rejoice for joy! You may even message me and tell me how insanely delicious this is...because it IS.


PRO TIP: Make a double or triple batch.


I might add that it is so addicting and maybe not the best thing in the world for you to eat, that only one time a year on Christmas my family and friends enjoy this insanely scrumptious treat.


You will start out with a giant bowl of both rice and corn Chex mix, make the sauce, pour the sauce over the Chex cereal, spread onto a pan, wait to dry, EAT. Crazy simple. I should also mention, if you are afraid of butter or don't like fat please don't eat this ;)



Ingredients for Chex Mix


1 14oz box Rice Chex

1 14oz box Corn Chex


Ingredients for Caramel Sauce


2 cups butter

2 cups brown sugar

1 cup light karo syrup

2 tsp salt

1 tsp soda

4 tsp vanilla


Process:


Melt butter, Karo syrup, brown sugar and salt in pot over the stove on low to medium heat. Once melted let it simmer for 2 minutes. Add soda and vanilla and stir very well. It will start to bubble up as you mix so keep the heat down! Simmer for 2 more minutes. Take off of stove and pour over Chex cereal in a large bowl. Once the caramel sauce is mixed into the cereal, place on a greased cookie sheet to dry. Let sit for about 20 minutes - the flavor is better once the cereal has cooled off from the caramel sauce.
