BBQ Pork Tacos

These have got to be THE easiest tacos of all time to make. You throw only three ingredients into a crock pot on low for the day, come home from work and bam! Dinner is done! They also make the house smell delightful (if you like slow roasted pork smell that is).


I make these every couple of weeks because it's a family favorite which means my kids devour this and well, I am slightly obsessed with tacos! My all time favorite are these Steak Street Tacos though! However, with the convenience and ease of these Pork Tacos, they might make their way to my number one favorite.



Sometimes taco toppings can get a bit out of control. The tacos are easy to make and then it takes 45 minutes to chop and make all the toppings. No thank you! These tacos really only need one and it's the slaw! My hubby does likes to put cheese and sour cream on his but I just stick to the slaw and it's pure and delicious goodness.


Ingredients for Pork Tacos:

  • Kirkland Smoked Pulled Pork (or something similar at another grocer)

  • 1/2 jar green salsa (we do mild so it's kid friendly)

  • 1/2 bottle of Sweet Baby Rays BBQ sauce

Process:


Put all ingredients in crock pot and cook on low for at least 4 hours.




Ingredients for Slaw:

  • 1 package store bought coleslaw

  • 2-3 fresh squeezed limes

  • 2 tblspn apple cider vinegar

  • 1/8 cup sour cream

  • 1/4 tsp chili powder

  • salt & pepper to taste

Process:


Put all ingredients in a bowl and mix together. Let sit for at least 1/2 hour so flavors soak in together!
